Maple Banana Crumb Coffee Cake
Ingredients:
Crumb Layer
½ cup cold butter, cubed
1 cup flour
1 cup brown or maple sugar packed
½ cup sugar
1 tsp ground cinnamon
Cake
2 cups flour
3 tsp baking powder
1 tsp ground cinnamon
1 tsp salt
2 ripe medium sized bananas, mashed
½ cup softened butter
¾ cup MacRae’s Rocky Ridge Maple syrup
2 eggs
1 tsp vanilla
¾ cup milk
Directions:
Preheat over to 350OF & grease a 9” x 13” pan/dish
Using 2 forks or a pastry cutter, cut butter for crumb topping into all crumb ingredients. Set aside.
Combine dry cake ingredients (flour, baking powder, cinnamon and salt), set aside.
Mix softened butter in a stand mixer until creamy. Add maple syrup and mix well for a minute. Add eggs, vanilla and mashed bananas. Do not over mix.
With your mixer on low, alternate combining milk and dry cake ingredients into the cake batter.
Pour half of the cake mixture into the pan, top with 1/3 of the crumb mixture. Then pour in the rest of the cake mix and top with the remainder of the crumb mix.
Bake for 50-55 min (until toothpick inserted comes clean).
